Pumpkin Spice Overnight Oats

Pumpkin overnight oats

Want a quick and easy breakfast on the go? Try out this healthy recipe...no baking required!

Ingredients:

  • 1/2 cup milk of your choice (I recommend almond or coconut milk!)

  • 1/2 cup gluten free rolled oats

  • 2 tablespoons pumpkin puree

  • 1/4 tsp pumpkin pie spice

  • 1/4 tsp vanilla extract

  • 2 tsp pure maple syrup (or honey!)

  • 1 tablespoon chopped nuts (I prefer walnuts or pecans)

  • sprinkle of dried cranberries (no added sugar, please!)

Instructions:

  • In a mason jar combine milk, oats, pumpkin puree, pumpkin pie spice, vanilla, and maple syrup

  • Mix until completely combined

  • Put lid and refrigerate overnight (or for approximately 8 hours)

  • In the morning, stir and add extra milk if needed for consistency

  • Sprinkle cranberry and nuts on top

  • Bonus points if you throw some dark chocolate on top ;)

  • Enjoy!
