Ch-Ch-Ch-Chia!

 

You've probably seen this thing called chia seed pudding blowing up the internet! It's one of my favorite go-to snacks as it totally curbs my sweet tooth, and packs a nutrient punch! It's also super easy to make, which doesn't hurt a bit either.

Chia has many nutrient benefits. It's rich in omega 3's, fiber, vitamins and minerals {calcium, magnesium, and potassium to name a few}, antioxidants, and even protein. WOW! Give this recipe a try and enjoy a truly yummy and healthy snack!

CHIA SEED PUDDING

  • 2 cups organic unsweetened coconut milk

  • ½ cup organic chia seeds

  • ½ teaspoon organic vanilla extract

  • ¼ cup {or less} pure organic maple syrup {I’ve also used local raw honey here...yum!}

  • Optional: ¼ teaspoon organic cinnamon {or any other spice you’d like}

Whisk all ingredients together and pour into a jar or glass container and place in the refrigerator overnight or for a minimum of 4 hours. Top with nuts, berries, coconut shavings, cacao nibs, etc! I’ve added cinnamon, pumpkin spice seasoning, and cocoa powder to taste...all delicious as well! Let me know which combination is your favorite in the comments below! Happy snacking!
